How to Make a Funfetti Cupcake Ice Cream Cone

Ice cream cone cupcakes are a fun addition to any St. Patrick’s Day or birthday celebration! While you can make your own Funfetti cake and frosting, I used the Pillsbury box mix for these and it was a super easy dessert that looks like it took all day! Follow the directions on the box and bake the cupcake batter right into the ice cream cone. Once the cupcake ice cream cones come out of the oven you can decorate for St. Patrick’s Day or any celebration. I used a Lucky Charms marshmallow for the top as well as rainbow and green sprinkles. This fun cupcake is an adorable way to make your celebration extra special.

Ingredients: (Makes 18 cupcake cones)

1 boxes of Pillsbury Funfetti Cake Mix
1 Boxes of flat bottom ice cream cones
1 Container of Pillsbury Funfetti Frosting
Sprinkles and Lucky Charms Marshmallows (Optional toppings)

Directions:

Follow directions on the cake box
Pour batter into the ice cream cones (put them in a muffin pan to keep them from tipping over)
Cook as directed on box
Once cool add frosting, sprinkles, and optional Lucky Charms Marshmallow

With only 6 ingredients (Lucky Charms cereal, Lucky Charms marshmallows, rainbow Goldfish, mini pretzels, and chocolate coins this St. Patrick’s Day recipe only takes minutes to mix together. This leprechaun bait recipe is also a fun St. Patrick’s Day craft for kids. Let them help pour in the ingredients and make their own creation.

To celebrate St. Patrick’s Day we have an easy shamrock sugar cookie recipe that you can make into a quick and festive shamrock cookie pop! Kids will love these adorable St. Patrick’s Day cookies! The shamrock sugar cookie recipe is an easy one to make and requires no chilling. The dough rolls well and creates a soft sugar cookie every time! Decorate your St. Patrick’s Day cookie pops with frosting and sprinkles! Wrap individually or put out at your St. Patrick’s Day party. Makes 36 cookies

INGREDIENTS:

1 Cup unsalted butter (2 sticks)
1 Cup granulated white sugar
1 teaspoon vanilla extract
1/2 teaspoon almond extract
1 egg
2 teaspoons baking powder
1/2 teaspoon salt
3 cups all-purpose flour

DIRECTIONS:

PREHEAT oven to 350° F
In the bowl, cream butter and sugar until smooth (about 3 minutes)
Add in extracts and egg
In a separate bowl, combine the dry ingredients of baking powder, salt, and flour.
Add a small amount of dry ingredients at a time to the wet ingredients.
Flour your surface and roll out the dough onto a countertop surface.
Do not chill.
Bake at 350 for 6-8 minutes.
Before cooling, slide the popsicle stick into the cookie.
Let cool on the cookie sheet for 2 minutes before moving to a cooling rack.

ICING:

2 cups of confectioners sugar
5 tsp of milk
1 tsp of vanilla
Food coloring as desired

Mix sugar, vanilla, milk, and food coloring together with a fork. Add more food coloring as desired.

Add sprinkles for more fun!

You can lay these out on a sweets table at a St. Patrick’s Day party, on a tray, or individually wrap them for passing out to friends!

Rainbow Smoothie Recipe – How to Make a Rainbow Smoothie

Whether you’re looking for a St. Patrick’s day rainbow treat or a rainbow dessert for a birthday party or celebration, the rainbow smoothie is always a hit! We’ll show you how to get the perfect rainbow layers every time. This visually beautiful smoothie also tastes like a rainbow! You’ll taste the different fruit in each rainbow layer.

INGREDIENTS

You’ll note that each later requires yogurt. This is to make sure it’s thick enough for the layers to spoon on top of each other. There are also fewer bananas in the red and green layers so that the color pops more. One banana is split between each layer.

*Makes 4 smoothies*

Red Layer

1/2 cup of yogurt
1/2 a banana
1 cup of strawberries
1 cup of raspberries

Orange Layer

1/2 cup of yogurt
1 banana
1 cup of orange slices

Yellow Layer

1/2 of yogurt
1 cup banana
1 cup of mango

Green Layer

1/2 cup of yogurt
1/2 a banana
1 cup of kiwi
1 cup of power greens
*2-3 blueberries to make it greener*

Purple Layer

1/2 cup of yogurt
1 banana
1 cup of blueberries
1 cup of blackberries

*This is how the smoothie looks when you pour the layers in or they aren’t thick enough!*

Rainbow Smoothie Tips

Make sure each layer is thick enough. Don’t pour the layers into each other.
You’ll want to carefully spoon each layer on top of the other. Start by spooning it to the edges to get a clean layer with an even amount of each.
If they need to be thicker, add a little more yogurt.
You can also pop the layers into the freezer for 30 minutes to get them more like an ice cream consistency for spooning.
